Palta Rellena

Palta Rellena is a Bolivian chicken and shrimp stuffed avocado.
Ingredients
  • 4 oz shrimp, peeled and cooked
  • 2 avocados
  • ½ banana, sliced
  • 2 tsp lemon juice
  • ¼ cup mayonnaise
  • 1 tbsp half & half
  • salt and black pepper
  • 1 pinch paprika
  • 1 pinch sugar
  • 1½ cups chicken, cooked and diced
  • 6 lettuce leaves, shredded
Instructions
  1. Cut avocados in half and remove pits. Remove some flesh from avocado skins. Reserve skins.
  2. Dice remaining avocado flesh and combine with banana then sprinkle with lemon juice.
  3. Combine mayonnaise, half & half, salt, sugar, pepper, and paprika.
  4. Fold in banana mixture, chicken, shrimp and lettuce.
  5. Spoon mixture into avocado skins.
